Brewed at Terada Honke in Kozaki, Chiba Prefecture. Owner and Master Brewer (Toji) is Masaru Terada.
Made from locally grown Shinriki rice.
Rice Polishing Ratio 80%.
Junmai Classification, Muroka – no charcoal filtration , Genshu – undiluted, Kimoto fermentation starter, pasteurised. Main fermentation takes place in a kioke which is a large tank made from Japanese cedar wood.
ABV 20 %.
A sake which has been brewed in a traditional way and then matured in the bottle to develop a complex flavour and textured deep palate.
Food matches – smoked meats and charcuterie, slow braised meat dishes and casseroles, roast beef, venison and duck. Cheese platters with dried fruit.
Recommend serve at room temperature.
Keep in a cool dark place during storage and after opening.
