Brewed by Niida Honke from Fukushima Prefecture. Niida Honke is a brewery focused on sustainable, organic techniques and they practice an active no-waste, minimal environmental impact philosophy. The brewery grows all of its own rice completely pesticide and chemical fertiliser free (shizenmai). All of the water used is from natural spring or well water. They use natural yeast starters, no sediment removers and no lactic acid solutions.
Made from locally grown, organic Toyonishiki rice.

Soft aromas of grape, honeydew melon, steamed rice and yoghurt.
This sake has a mouth-coating, smooth suggestion of grape then a pleasant, dry umami takes over and spreads across the palate. The finish is long and just elegantly glides away leaving a suggestion of almond and hazelnuts.
Matches well with rich meat dishes with umami elements at the fore. Crispy roast chicken, yakitori and steak. Braised beef and pork dishes and roast lamb too. Try alongside your favourite charcuterie for example fennel salami and bresaola.
This is a versatile drink as it can be served chilled, room temperature and gently warmed.
Store in a cool, dark place and after opening keep refrigerated.
