  • Brewed at Yamanashi Meijo in Hokuto City, Yamanashi Prefecture. “Yama no Kasumi” means mountain haze in Japanese and describes the misty, cloudy appearance of this sake in the glass.
  • Made with locally-grown Hitogokochi rice.
  • Rice Polishing Ratio 67%.
  • Sparkling Classification – Junmai, Usu-Nigori (slightly cloudy from retained rice lees), Secondary in-bottle fermentation.

  • Ginjo-like aromas of peach, stone-fruit and citrus
  • Soft flavours of rice and stone fruit with a gentle fizz. This sake is pasteurised after a secondary in-bottle fermentation similar to traditional methods employed in making Champagne. This method results in a fine perlage and some sediment remaining in the bottle giving a cloudy appearance. Medium dry in style and drink as an alternative to Champagne.
  • Food matches – oysters and seafood platter, calamari and prawns. Poached chicken and fish. Rice pudding and creamy desserts.
  • Serve chilled in tulip-shaped glass to capture aroma and appreciate the bubble. Care required on opening the bottle. After gentle opening ensure the sediment at the base is gently circulated in the bottle.
  • Store in a cool, dark place. After opening keep refrigerated.
