This is a great representation of an elegant ginjo style. Juicy, fresh and bright with a firm body and a medium dry, subtle and sophisticated finish.
Food matches – beautiful fresh seafood platters, calamari fritti and grilled sweet prawns, mussels with sake and garlic, pan-fried snapper fillet with garden salad. Crumbed veal cutlets, stir-fried pork. Chinese favourites like soya sauce chicken, prawn dumplings and Xiao Long Bao and shabu-shabu. Fresh fruit platter and camembert cheese.
Serve chilled and use a wine (tulip -shaped) glass to capture the expressive aromatics.
Keep in a cool, dark place. Once opened keep refrigerated.
