Junmai Daiginjo Classification. Genshu – undiluted. Kake Shibori technique – Bamboo poles suspend cloth bags full of fermented sake from the tank, which then drip “filter” directly into bottles. This system minimises pressure on the finished sake and extracts the finest essence of the sake.

Beautiful, mellow bouquet of green apple and melon with rose petal notes.
Rich, fresh, juicy fruit flavours that glide over the palate and tantalise the tongue. Great balance and structure to this Daiginjo with a cleansing minerality on the finish.
Matches well with seafood and fish – think grilled scallops and prawns or sushi and sashimi platter. Sits well alongside rice dishes including paella and risotto. Grilled chicken and rice or glazed Chinese roast duck with rice.
Serve chilled and use a wine (tulip -shaped) glass to capture the aromatics.
If possible store in a refrigerator. Once opened definitely keep refrigerated.
