Brewed by Katsuyama Sake Brewery, Sendai City, Miyagi Prefecture. This multi award winning brewery focuses on the production of premium sake which is additive free and pure in intent. They believe in producing sake with clean umami to complement and enhance the food on your table. This is a Junmai Daiginjo which is at the pinnacle of traditional sake brewing techniques. This is referenced in the naming of this sake using the kanji character “Den” 伝 which means tradition. At France’s Kuramaster Sake Competition in 2019 this sake was awarded the highest honour the Prix Du President.

This sake has rich aromas of peach, red apple and muscat grapes.
This sake is full-bodied, and has beautifully balanced flavours of honeydew melon, peach and strawberries with a soft honey undertone. Silky smooth texture that suggests delicacy and refinement with developing umami on the palate and a crisp end note.
The richness of this sake and clean umami make it a perfect match for rich fish such as tuna and salmon sashimi (particularly those cuts from the fat-rich belly of the fish) sushi and lightly seared tataki. Works well with western dishes like a tomato based pasta, steamed shellfish and braised meat dishes. Versatile pairing with vegetable based salads with creamy dressings and risotto.
Serve chilled and use a wine (tulip -shaped) glass to capture the aromatics.
