The word Akatsuki means “a new dawn” or “sunrise” and this sake is intended as a new modern style for the next generation of sake.

Junmai Daiginjo Classification. Centrifugal separation used to extract the sake from the fermenting tank.

This sake has rich aromas of peach, red apple and muscat grapes.
This sake has great complexity with a richly textured berry fruit centric palate. The sake has superb balance with an off dry, mineral and saline edge, leading to a finish with clean acidity. Super-refined, luxurious drink that expresses the umami of the local rice whilst echoing a beautiful taut Chablis.
Food matches – in symphony with seafood – particularly shellfish, oysters, prawns, scampi, pearl meat, abalone and scallop. The off dry finish and acidity means that this sake suits many savoury dishes with umami based sauces. Braised meat, asian simmered fish and meat dishes. Perfect alongside a multi-course Kaiseki Japanese meal.
Serve chilled and use a wine (tulip -shaped) glass to capture the aromatics.
If possible store in a refrigerator. Once opened definitely keep refrigerated.
