Brewed at Imada Shuzo located in Akitsu town, Hiroshima Prefecture by Ms. Miho Imada. The town of Akitsu is on the coast of the Seto Inland Sea which is an area rich in marine life. The community in this area eat a diet rich in seafood and this sake matches beautifully with the local oysters which are a speciality of this area.
Aroma of sea salt and waves, poached pear, toasted almonds, chestnuts and steamed rice pudding.
Full bodied, bright and refreshing sake with a taste of pear and apple. Pleasant, zesty bubble arising from secondary in-bottle fermentation with a crisp, tight finish punctuated by a citrus tang.
Food matches – suits seafood such as oyster, prawns and scallops, smoked salmon, white fish, grilled chicken, veal and pork. Try with pizza.
Serve chilled in a tulip shaped / champagne style glass. Take care on opening. Ideally slowly open the twist cap letting the bubbling settle. Once fully opened replace the cap and gently evert to mix the yeasty lees at the base of the bottle. This will create a lightly cloudy sake.
Store in a cool, dark place. After opening keep refrigerated, the fizz will slowly reduce over time if stored after opening but it remains a delicious sake.
