  • Brewed at Imayo Tsukasa Sake Brewery in the Nuttari neighbourhood of Niigata City. IMA is a brand that was developed to stand for Innovation, Mastery and Art while still honouring the brewery’s traditional roots. This sake, which was three years in it’s research phase, was specifically designed to have a synergy with oysters by incorporating a harmony of sweet, sour and savoury umami flavour accents. The fermentation yeast was specifically chosen to produce malic acid in the final sake which adds some bright, clean acidity reminiscent of a Chardonnay wine. This acidity, low iron content and umami in the sake complements the flavours found in oysters.
  • Made from Gohyakumangoku rice.
  • Rice Polishing Ratio 65 %.

  • Aromas of grape, ripe peach, persimmon and candied orange.
  • A beautifully balanced sweet and sour sensation sweeps over the palate and finishes cleanly. There is a distinct vinous feel to this sake both in the light texture, expertly structured body and flavour profile and its “rice”roots may be difficult to discern at first.
  • Oysters, oysters, oysters !! Raw oysters, steamed oysters with ginger and spring onion / black bean or XO. Oyster omelette, oyster nabe, smoked or deep fried oysters. Try with salmon carpaccio and caviar. Great with sashimi or with lightly seared tuna tataki. Goes well with other light coloured meats and salad vegetables.
  • Recommend serve chilled in a tulip shaped “wine” glass.
  • Store in a cool, dark place. After opening keep refrigerated.
