Brewed at Domaine Senkin (Senkin Shuzo) in Sakura City, Tochigi Prefecture by brothers Kazuki and Masato Usui, who have a progressive style upholding their mantra of “do nothing unnecessary” and espousing the concept of Domaine or Estate use of natural resources and traditional techniques. The word Muku in Japanese means purity, without adornment.
Made from locally grown Yamada Nishiki rice. Rice vintage 2017.

Junmai Daiginjo Classification – not stated on the bottle as the brewery does not want drinkers to be swayed by pre-conceptions about classification and style. Genshu – undiluted, Muroka – unfiltered.

Fragrant aromas of pineapple, berries and lychee.
Elegant, soft juicy sweetness with raspberry and cranberry notes with developing cleansing umami and lemon peel sensation in the mid palate. Feels texturally more creamy than the Modern Senkin range.
Flexible and versatile food pairings like sautéed scallops, barbecued prawns, steamed fish and seafood platters. Try with margarita pizza, marinated grilled meats and Korean bulgogi. Equally at home with a fresh caesar salad or classic Salad Nicoise.
Serve chilled and straight from the fridge, best suited in the 8-10 degree range but also expressive at room temperature where it will feel more creamy. Suits wine glass style stem-ware or thin walled drinking vessel.
Store in a cool dark place and if possible keep refrigerated.
