Description

  • Brewed at Yamanashi Meijo in Hokuto City, Yamanashi Prefecture. Brewed in collaboration with Alain Ducasse and Gerard Margeon (Executive Chef Sommelier for Ducasse Paris) and Master Brewer Ryogo Kitahara this stunning sparkling sake has been inspired by the feelings evoked by the Mediterranean Sea but utilising the incredible purity of Shichiken’s native Hakushu water.

  • Sparkling Classification – Kijoshu style – the fermentation additions use a proportion of sake instead of water. Matured in cherry (sakura) barrels. Secondary in-bottle fermentation.

  • ABV 12%
  • Aromas of musk melon, white blossom, berry and whipped cream.
  • Incredible fine mousse creating a light suspension for pear and grape fruitiness, with hints of cherry, that spreads over the palate leaving a crisp, clean impression. This luxe sake is pasteurised after a secondary in-bottle fermentation similar to traditional methods employed in making Champagne. Medium dry in style and drink as a delicious alternative to Champagne.
  • Food matches – oysters and seafood platter, calamari and prawns. Poached chicken and fish.
  • Serve chilled in tulip-shaped glass to capture aroma and appreciate the bubble. Care required on opening the bottle. After gentle opening ensure the sediment at the base is gently circulated in the bottle.
  • Store in a cool, dark place. After opening keep refrigerated.
